Few things taste more like winter and Christmas than a hot mug of mulled wine. It is comforting and warming and a must-have on a cold winters’ night or while visiting your local German Christmas market. Today we are sharing our recipe for mulling syrup with all of you who can’t get enough of the stuff and want to have a go at making it.

Ingredients for about 500ml of mulling syrup

  • 2 Yorkshire tea bags (or any other strong black tea)
  • 150 ml of orange juic
  • 250 water
  • 125 water
  • 175 g of sugar
  • 4 cardamom pods
  • 4 cloves
  • 3 star anise
  • cinnamon stick


Make a strong tea in a big pan with the tea bags and 250ml of water. Let it brew for a good 10 minutes.
While the tea brews, crush the cardamom, cloves and star anise in a mortar or beat it in a bag with a rolling pin.

Take the tea bags out of the pan squeezing them with a spoon. Add 125 ml of water and the orange juice to the pan, then the crushed spiced and your cinnamon sticks. Bring to the boil. Now add the sugar and stir constantly for about 5 minutes (so the sugar doesn’t stick). Don’t let it boil, just wait until a little froth forms on the top. And you start getting the fragrance from the spices! 🙂

Once it has simmered for at least 5 minutes, turn off the heat and let it sit for about 30 minutes. In the meantime sterilise the bottle(s) you will use, by filling them with boiling hot water.

Now put a sieve over another pan and pour the mulling syrup through the sieve. Use a ladle to avoid spillage. Bring the syrup to the boil again and pour into the bottle(s).

For delicious home-made mulled wine we recommend warming up a whole bottle of wine (it doesn’t have to be an expensive one…) Don’t bring it to the boil completely, otherwise all the alcohol will evaporate. Add to the warm wine about 200 ml of mulling syrup. If necessary, add more syrup to taste.

For mulled cider or mulled apple juice, just swap out the wine for 750ml of one of the other drinks.
